The key difference you're missing is that Sol Press is an all=ages company which sells more than just all ages visual novels. They also sell other products (especially LNs and manga) from license holders which will not accept being associated with adult content (unlike most VN license holders, since even those releasing all ages content are typically comfortable with 18+ associations, by the nature of the VN industry).
There could conceivably be both an all ages site for Sol Press and an 18+ site for the separate company which deals with 18+ releases of the associated adult content of some of the VNs for which Sol Press releases all-ages versions. However, said site does not currently exist. Maybe it will in the future; I do not know any more than you. The all-ages shop is a sound business decision, because they will benefit from selling their LNs and manga, and yes their all-ages VNs, themselves. Whether it makes sense for that separate company to make an 18+ site to sell their wares, and to then go through all the associated likely payment processor woes mentioned here, is a separate concern.
I'll also add that, from my understanding, payment processors handling adult content typically charge a great deal more overhead due to the higher-risk nature of the product, especially when dealing with small companies.
Long story short, it's a lot more complicated than you're claiming.

Personally I'm glad that they retained the "all ages version + optional patch" approach.
Not all of them. Yotsunoha has been rejected from Steam, and I want all-ages version of it (and PS2 version suffers from horrible image quality, so it's a no go)

I feel that way too, but surprisingly it nevertheless clicked for me, and in turn made me nostalgic for something I haven't experienced in the first place...

It seems that I have become nostalgic for fantasy. Life definitely can be strange...

I recognize it as a fantasy and nothing more.  For one thing, romance is never as clear-cut as it is in most SOL games... and for another, girls aren't that pretty in the third dimension.  Becoming lonely... I do wish sometimes I could go back in time to kick myself in the ass, but that doesn't have anything to do with that kind of game, lol.

Started playing KoiChoco. Was initially interested in it because of how beautiful the art was, but was a bit weirded out with the combination of themes in its title. I've been reading for around three hours, so I haven't gone far enough to really get into depth with any of the story elements.
    Yaoi sticks.

Ack! Got ninja'd by @ittaku Was going to recommend it too.
    Some, that weren't mentioned yet:
    - Koi iro Chu! Lips - full of tropes, but very sweet - I loved it.
    - Sakura Sakura - another lighthearted one, loved character design and music.
    - Tsujidou-san no Jun'ai Road - if you don't mind tsunderes and some over-the-top silliness, try it out. Might check out Majikoi series as well.
If you liked Konosora, check out Miagete Goran, Yoozora hoshi o (A Sky Full Of Stars) too.
    - Sanoba Witch is another very good one.

Oh, come to think of it, 3/4 heroines from Under One Wing are pretty damn stacked (all but poor little Mimari). The art in this one is stellar, too; love the coloring in the CGs.

You sir, are in desperate need of To Heart 2 Trope king, very light on drama, more like anime than a visual novel, romance galore, 11 heroines, 9 routes, hours and hours of enjoyment, and translated by yours truly.

The Battle Rankings were what made Little Busters common route so much fun. Don't take it seriously, and just watch the waifus battle it out.
Sometimes the RNG scripts some funny results. I swear, Komari is quite strong in the battle rankings at times....
The RNG can also script some dramatic baseball matches too (in one match, on the absolute final ball, Rin won the entire game with a home run).

Stats in the minigames and the baseball game are the same. From what I understand, it's pretty much impossible to beat the baseball game on your first playthrough, but later it becomes a lot more trivial.
Well, there's not really much meaning to the minigames to begin with, so just do what you want. I'd recommend not skipping them for a few times at the beginning while you're still not tired of them, and skipping them afterwards.

Finally finished Grisaia no Meikyuu - The Labyrinth of Grisaia. It's quite a while since I read the first one, but since Meikyuu mainly was about Yuuji's back story, it wasn't really a big issue that I couldn't remember anything anymore.
I did start directly with Yuuji's back story and not with the after stories of the heroines. I'm not exactly a big Grisaia fanboy and the Angelic Howl side story part was the only thing I really liked about it. Yuuji didn't play a role in Angelic Howl and in the common route he was mostly presented as some kind of idiot agent for the lulz. So I was a bit hesitant of what to expect.
Fortunately, I didn't get disappointed. The writer took Yuuji's back story for the most part equally serious as Angelic Howl. The first part in particular was outright gloomy. Domestic violence, abuse, rape, suicide - it was quite dark, but also very well written. Although most people seem to appreciate Fujisaki Ryuuta mainly for his slice of life comedy, I think he's a much better story writer. I think I was able to symphatize with Yuuji for the first time here - he showed so much more emotions than the soulless shell in Kajitsu. It was also nice to see some real action for a change.
While Yuuji's back story was overall still pretty good, there was unfortunately one thing that was just bad. The writer might be decent in comedy and good with story but he's outright awful if it comes to romance and H-scenes.
I wish I would have played the all ages version to get spared of that crap.
I also played three of the after stories: Amane's, Yumiko's and Sachi's. Though I dropped Amane's after story pretty soon when Amane reflected on how she gets horny when Yuuji treats her like shit - thanks I'll pass on that one. Fortunately, Yumiko's was much better. I think she's the only heroine that really has a good chemistry with Yuuji. Their relationship feels so honest and I just love her super cute facial expressions. Sachi's was somewhere in the middle. She's certainly one of a kind with her maid antics, but she also feels a bit too much like an artificial comedy character.
Overall rating: 7/10 (Could have gotten a 7.5/10 if they would have spared me the H quota in Yuuji's back story)

Why? MG fucked up the Hapymaher translation worse than Sekai fucked up the Chrono Clock translation, and at least Sekai knows that Chrono Clock had issues, whereas nobody but me seems to be bitching at MG for their absolute butchery of Hapymaher. I know the people slated to do Amatsutsumi and I have every confidence it's going to come out great; meanwhile, it would've been the same team from Hapymaher butchering Amatsutsumi on the MG side. SP getting it is great news.

It's vague enough that it shouldn't spoil it too much for you. I think you can read the VN "safely".
I've encountered similar kind of spoiler about Clannad before reading it, yet still I enjoyed it tremendously, and it's highest rated VN on my list. There's difference between knowing what happens in the story, and experiencing it through reading.

Well, what can I say - I think the spoiler saying just
is very vague and even might be a bit inaccurate, so don't let it bother you too much. You might be surprised Assume you still don't know much
(I won't say anything more, just read it )

But at least it made me realize. While being a weeb, there's no escape. We're all degenerates. We ogle 2D high school girls and enjoy it. We find cartoon 17-years olds attractive, to the point we might want to see them do lewd things like... Kissing and holding hands! And maybe even more...
We're all going to hell together. But... Let's be nice to each other in the meantime! Degenerate solidarity!
