Well an easy way to understand exactly when a flag occurs or which ones are major ones is to look at walkthroughs. If you choose not to, your best bet is that choices that usually focus on one character are usually flags for you get closer with them. It varies from one game to another, but most times they can either be the most intuitive or the least intuitive of choices.

I think you should pick something with a relatively simple level of Japanese and something that is manageable. Taking on Aiyoku no Eustia as a first project is probably not wise.

Depends on difficulty of the VN. Usually a VN with less infodumping and more commonly used terms won't take too long or too much effort to read. Anything with long infodumps or hard/rarely used terms take a lot longer.

Yeah, Favorite has a fairly distinctive art style and Hoshimemo is newer in comparison to a lot of other VNs as well. Might want to give a Key VN such as Little Busters!, Clannad, or even Rewrite a go. They're on the longer ends of the scale, but are rewarding.
