Dating Sims are sim games where you fiddle with stats, Visual Novels are a form of interactive narrative (kinetic novels are not,) Adventure games means you like exploratory and puzzle gameplay, Eroge means you like erotic content with your games. Games can have more than one of these tags because these are all different types of categories. For instance Eroge is a tag relating to content whereas a Dating Sim tag describes the gameplay mechanic. That's not to say games can't have more than one tag from the same category...
