    Just a quick opinion here : when trying to learn the language, it might be better to avoid games with gameplay, as the tools to help you aren't best suited for gameplay parts. I don't know if the dating sim you have in mind should be in the 'have gameplay' category, but keep in mind that it might be easier for you to stay in the normal VN perimeter to learn JP.
    As for your question in itself, sorry I know too little about dating sims and let someone else answer you.

    There's two different reasons to use those tools :
     - to read raw Japanese text while being assisted : great help and it is useful for beginners as well as veterans (beside your own head if you know the kanji/word, nothing can beat those tools to seek information)
     - to MTL in real time.
    If your need is MTL, I can't help you much as I'm not using translators : just know that Textractor itself can take care of some translation.
    About reading raw Japanese, there's nothing much to say, but here is a few things :
     - use Textractor as a hooker (on this point, same as if you want MTL), but don't use it for 'presentation' of the text. Textractor itself proposes a few things to 'present' the text but I suggest you don't use them ;
     - use one of these for text presentation :
          * Translation Aggregator : the oldest of the tools I'll speak of. It has most of what you need for raw Japanese presentation and is still being (vaguely) updated, although I don't really know to what extent. Considered a very good tool by most people reading VN in Japanese.
           * JL (https://github.com/rampaa/JL) : I discovered it very recently and am using it for the first time with the VN I'm currently reading. It is still very young and I encountered a few bug/crashes but it is very promising (modern UI, presentation very customizable, possibility to add Yomichan/Nazeka compatible EPWING dicts, mining for Anki). I probably will continue to use this, especially since it seems development of new functions is still continuing.
           * Chiitranslite : the one I've used for years (even after its hooker function began to not work). Not updated, considered obsolete for a lot of people, a lot of customization missing... despite all of this, it gave what I wanted : a raw, not colored, no space added, not touched in any way raw Japanese text. But the reasons I used it for so many years : it has functions no other tool propose (to my knowledge at least).
                  1 : you can select text and ask it to re-parse Japanese from the text you selected, extremely useful. The automated parsers will often fail you and this possibility is huge to me. Coupled to the opposite : select a 'parsed element' (word, expression or whatever) and 'break it', it's just wonderful. I can't get why other tools won't do this...
                  2 : presentation of words definitions not in lists, but words separated in tabs (in the popup window that shows dictionary items). The result : for readings that correspond to a lot of words, you can browse those words by changing tabs, far clearer than a list that might or might not be scrollable. Most tools presenting in list will show you a maximum of entries and this problem does not concern Chiitrans : if you have 60 entries, you have 60 tabs (first the words more or less sorted by frequencies, then the names). You have as well the side advantage to benefit from Chiitrans memorizing the last tab you consulted for each reading : for readings that correspond 99% of the time to the same word, it is useful to have the most likely definition proposed from the second encounter (independently of frequencies dicts).
    Textractor (the hooker) will send the raw JP text to the clipboard where all of the 3 'presentation' tools will get it. By the way : you could use any combination of the 3 tools at the same time (since all they do is catching text from the clipboard). Could help you choose your preferred tool. Your only limitation might be screen space ^^.

    English not being my mother language, I first tried it with English-mother language (based on alphabet) : it was astonishing. I can't say it was perfect, but honestly I was impressed.

The result was far lower in quality than my first attempt, but nonetheless, it was probably the best MTL I've ever seen. Also, note that the chapter I used had only a few dialogues, maybe it would have been a different result with a VN having a lot of them.

    It's simple : I just wanted to warn the people that use DeepL, be it for VN or anything else. There's a deep flaw going with it : it is too good in a certain sense.

    Too good ? WTH ? Well, DeepL seems to be able to give sense to a sentence most of the time. Yeah, give sense even if the translation fails (partially or completely), and you the reader might not notice because the sentence might even make some sense in the context, just that it has not the sense it is supposed to. While the Google Translation lot would most likely just send you an unintelligible text that would at least warn you of the failure.

    I'm not sure there's a workaround, but I guess one should try, if possible, to use at least two engines in parallel and hoping to get the better of them.
    Note : my level at reading Japanese is quite high when we are speaking of reading VN/LN/Mangas etc. I'm positive I encounter very few passages I'm not correctly understanding and, when this happens, I generally know enough to get that I missed something, allowing me to do a bit of research if I feel like it. I'm not sure how I would fare with true literature for example (a lot less good I presume, but I guess it would depend of the writing). Also, when possible I'm still using a text hooker to help me seek out the few kanjis or words I might not know or remember.

    Yeah, no, not for me. This can't be compared to Last Regrets or even Ruins-a-dream.
    Haven't read Snow (for now at least, maybe I'll try it sometimes) but from the opening alone, I'm not sold.

    To me, the difference is more in the life cycle, not that much in the expression of the 'thorny attitude' (that could be anything from violent words to physical violence or anything for both)  :
     - the classic Tsundere would generally slowly but steadily go from Tsun to Dere and, arrived, would mainly remain Dere ;
     - the modern Tsundere would repeat almost endlessly the cycle Tsun to Dere to Tsun to Dere to Tsun.... blushing shyly while hitting to death the cause of their blushing maybe ?
    Well anyways, I'm sure others would point you to other differences but that's my take on it.
    Classic Tsundere is more tolerable for me (sometimes likeable) because the character is often far more coherent and even if the character is too violent/irrational (which, I feel, happens less often than with the modern Tsundere), it should happen in a limited time in the story since the character should undergo Tsun to Dere cycle one time only (or at least not continuously).

    Yeah, I'm talking about the ones on syosetu.  They are just about as long as the main story and are ongoing.  There are also several major story arcs in addition to a bunch of short stories, including three involving Kousuke and two involving Kouki.

    I'm reading things in Japanese for many years now and I've to say that when I really care for what I'm reading I'll 100% chose to read the JP version even if I've the English or French version at disposition. I was kinda surprised to act like this at first, but that's how big a quality difference there is to me, even with reputed good translators.
    Well, I'm arriving to my point : although I eventually switched back to JP version, I've read a bit of Primal Hearts 2 in English and I felt that at least the beginning was quite well translated.

    This is quite an old visual novel. It has a SRPG reboot called Codename: Bakery Girl. This, Girl of the Bakehouse is the original short visual novel. I recommend it to those who like military, tragedy and romance genre. Honestly, I think it is pretty good for a short visual novel. So, hope you pick it up in your free time!

    To me, the fact that the twist of Planet of the Apes is OK has nothing to do with the 'type of story' it is. It is OK because the narration never had any reason to speak of or even come close to speak of the ever remote possibility that this could be earth... until the appearance of those building's remains. Besides, I've read and watched the book and movies an eternity ago and I can't remember everything, but I wonder if there wasn't some kind of foreshadowing related to the moon (a least in the book ?). Can't remember well so I'm not too sure.

    It's not about following other's rules or not, it's about a belief/mindset ("To be able to create a good mystery, this should be done"). If the nature/object of the mystery greatly bends toward "who is it", there are different possibilities (for example having multiple strong candidates) but an asspull just before the twist clearly is bad writing...
    There is no problem in writing about pink elephants suddenly appearing as long as it's well explained in due time (and/or foreshadowed) and it's coherent with the settings.

    So, almost a month ago, I read the latest Youjitsu volume, and a bad habit of Kinugasa shows up in it, so I decided it was time to read Akatsuki no Goei and Reminiscence to see if the endings were really that bad.
    Well, let's start with the conclusion: I didn't mind the way the routes ended, but didn't like the endings themselves. I'll come back to it later.
    First, AkaGoei 1.
    It was honestly pretty disappointing. Yeah Kaito is amazing, yeah the comedy is great, but that's it. Worse, the structure of the routes is terrible. Really short common route, then heroine route starts, but there is some common route chunks inserted in between creating some incoherences in the way the characters act. Also, the start of each heroine route is basically another common route considering that whatever stuff happens without leading to anything.
    Anyway, the only thing AkaGoei 1 has for it is the comedy. The rest is just some patchwork making it looks like a VN.
     
    Next, AkaGoei 2.
    Well, it's a FD, so nothing much to say about the after stories (or the fact that Reika totally got the short end of the stick). Kaito's past was interesting and make you understand why he's so strong, so it was pretty good.
     
    AkaGoei 3.
    The first half is amazing. The rest not as much. Kaito gets to shine more this time, but then come another problem I have with the trilogy: we never get to see Kaito being serious. Or rather, he does get serious, but never can show his 100% (either he's tired, or injured, etc) Kaito is so strong that Kinugasa had to do that to have some sort of tension, which is a shame. Then back to my other problem: not having either an open ending or harem ending. Like I said above, I didn't mind the way the routes ended, but my problem is that considering canon stuff happening in the series, there are 2 girls who literally can't live without Kaito, and arguably 3 others who most likely will never find another man beside him. So even if not a harem ending, an open one with everyone would be better. (though, considering Anzu is only in the Forbidden Area part of the story, it'd be difficult. At least she's with Kaito in all the Forbidden Area endings).
    Anyway, even that aside, Kaito's awesomeness and the comedy were totally worth the time I invested in the trilogy. Special mention to Son, and his antics with Kaito. More stories should make you love the male characters like that, rather that just using the heroines.
     
    Now we go 150 years in the future with Reminiscence.
    It's even more of a disappointment than AkaGoei. I think the main reason is because I played them almost successively. Hidetaka is a good MC, but when compared to Kaito (who I was with for 3 VNs just before), he just pales in comparison... Also, I wasn't particularly fan of all the negotiation stuff (the cases were so obvious). Another thing I didn't like was the fact it's the future of AkaGoei. Yeah, it's just an alternate future, but still. Even more so considering the crumbs we learn (and that CG in Kyouichi's POV). Still, it wasn't boring and I did went through all the routes. Special mention to Aki's, I guess. In a way, the whole story is all about her and Hidetaka, so once you've done her path, the way you see the other routes is different.
    Unfortunately, I just can't care about Re:Collect, so I'll stop here.
     
    TL;DR: AkaGoei Trilogy was great and worth my time. Reminiscence wasn't bad, but too long far what it was, so I feel like I wasted a little of my time.

    It's not a VN problematic, but sadly a big part of 'otaku' culture. I don't agree with the fact that's it's just comedy ; it is to me very linked to the same roots as the tsundere thing (especially 2nd generation), super heroines that are stronger than their male counterparts if those are even present (everywhere now, from swordwomen, magical girls to even Yamato Nadeshiko and idols that have become the super heroines of the non-fantastical tales) and even NTR. For me, this is also linked to the famous 'beta' MC.
    This culture is (was ?) largely a male thing, and as cliché as it may seem, males that have no or few good relations with women. There is no reason to expect sane male/female relations in general... there's a lot for me to like in this culture, but this aspect is what makes me often drop some VNs, animes etc.
    EDIT : I may be foolish... but I've even sometimes asked myself if that could be somewhat linked to the lack of birth in Japan. That's a problem shared by most rich countries, but seem heavier there compared to other ones. You may laugh at me ^^.

    Read it years ago and can't remember everything, though I clearly remember the common route almost making me drop it. The comedy was honestly not enough to make me forget the defaults. Can't remember them all, but a sentiment of isolation, a world of papier-maché without substance behind. Isolation if done well (especially for psycho/horror) can be very pleasant, but that was not the case in this too isolated, too long and too repetitive common route.
    I clearly remember two positive aspects though : 1. you spoke about the music not being good but I really loved them. 2. I read the fan TL at that time and I remember having thought that it was exceptional.

    Clannad has too many choices to my taste, but what you point out is something I really love in this VN : I love when routes aren't just the given heroin's stronghold with nobody else existing anymore... in fact, for me that's probably the weakest point of VN in general in comparison to other story telling medias (having a route system gives the scenarists an excuse to do so, simplifying their role...).
    Most of the time, you just get something approaching when the scenario needs it (love triangle and such things).
    Of course, I'm not saying "give a chance to heroin B while being in heroin A route", but thinner walls is a good thing to me.

    Often, a walkthrough gives a lot of advices on a lot of different matters (recommended route order, whether there's a patch or not and whether one should apply it or not, hint on the length of the VN (helps me decide what to play at what time) and many other things). Anyway : I, for sure, prefer to have an extensive walkthrough for every VN I read.
    By the way, this is a general stance (I'm not reading this VN, for now at least).
     
    EDIT : forgot one of the most important reason to use a walkthrough for me. The save points given by it helps minimizing losing time (to the point that with some VNs, the walkthrough almost makes the skip function useless).
